Fermenting is a huge topic to cover, especially in one blog post! So today, rather than discussing different techniques or recipes I will talk about what I believe to be the most important step in fermenting: choosing the correct fermentation vessel. If the correct equipment is not chosen the ultimate benefits of consuming fermented food is lost, mainly improving our gut health by consuming the good bacteria or probiotics. Basically, we need to make sure that the jar we use in fermentation will promote the growth of good bacteria and will also cause it to taste delicious. You know, so your kids will want to eat it as much as you want them to eat it.
